Tzatziki (cucumber and yogurt dip with dill)


Tzatziki sauce -- it is a wonderful combination of flavors that adds a whole new dimension to the foods you put it on.  It's good on meats, cooked vegetables, raw vegetables, chips, or eaten with a spoon (okay, I might be a little extreme...).  The point is, this is a fantastic condiment to make, and it's really very easy.  Here's my recipe:

Tzatziki Sauce:
  1.  2 C. greek yogurt (you can make this easily)
  2. 3/4 to 1 C. grated cucumber
  3. 3 cloves garlic, minced
  4. zest of half a lemon
  5. juice of a lemon
  6. 1/4 C. flavorful olive oil
  7. 1/2-1 tsp salt
  8. 1 tsp dried dill or mint
Squeeze the excess water out of the grated cucumber by wrapping it in a thin cloth (I use a floursack) and squeezing it with medium firmness over the sink.  Stir all the ingredients together and let them rest for at least a couple of hours in the fridge, and you're ready to go!
